Mason Jar Salads!

Another hint to make ahead on your day off. Then they will be ready to go to work for lunch or waiting for you when you get home for supper.

TOOLS OF THE TRADE STEP ONE

What you really need:

4 sets of table dishes

4 sets of table flatware

4 serving spoons

8 12 ounce glasses

4 Large mugs

4 steak knifes

4 inch "Paring" Knife

Kitchen shears

Silicone scraping spatula

Wooden mixing spoon

Metal or nylon ladle

8 inch non-stick skillet

10/12 inch skillet with a lid

3 quart sauce pan with a lid

4 quart "Dutch Oven" with a lid

Fine sieve

Large strainer

9x13x2 baking pan

"Jelly Roll" baking sheet

Nesting set of glass bowls

from 4 ounces to 12 cups

Measuring spoons

Measuring cups

I realize that time for breakfast is often too short. But if you can find some time on your day off to prepare some quick grab and go items, you may save money and gain nutrition

I am not sure if oats really are gluten free but they satisfy the appetite for several hours to get you through the morning. Honey will make these tasty but the stevia will control the calories and make these a great choice for dieters and diabetics.

Personal Sized Baked Oatmeal with Individual Toppings: Gluten Free & Diabetic Friendly

Ingredients

2 eggs
2 cups applesauce, unsweetened
5 cups, Old Fashioned rolled oats
1 banana, mashed
2 3/4 cups milk (I used 1%)
1/4 cup flaxseed meal
6 packets of Sweetleaf Stevia or 1 1/2 teaspoons stevia powder
1 tablespoon ground cinnamon
3 teaspoon baking powder
1 teaspoon vanilla extract
1 teaspoon salt
Optional toppings: raisins, walnuts, chocolate chips

Directions

Preheat oven to 350 degrees.
Mix eggs, vanilla, applesauce, banana and Stevia together in a bowl.
Add in oats, salt, baking powder, flax and cinnamon and mix well with wet ingredients.
Finally pour in milk and combine.
Spray a 12 and 6 capacity muffin tin with cooking spray or use cupcake liners.
Pour mixture evenly into muffin tin cups.
If using toppings add them onto the tops of muffins now. If using fresh or frozen fruit, drop it right into the batter.
Bake 30 minutes until a toothpick in center comes out clean. Cool and enjoy or freeze them in gallon freezer bags.

Use a half cup to one cup of honey in place of stevia if you don’t have any.
The batter will look RUNNY, don’t worry!
Freeze them in an airtight container or Ziploc bag after they have cooled. Thaw overnight in refrigerator for morning you want them.
Reheat 45-60 seconds.
Spray the cupcake liners with nonstick cooking spray.
Adding cream or milk over the top after warmed is very yummy!
If you don’t have the stevia packets or powder only liquid, here’s the conversion chart.
Use a 1/4 cup to fill each muffin and the extra batter can be top off some that look smaller.
